Raw food and the Tartare

Ingredients are the main star of our restaurant and high-quality meat makes always the difference: we constantly search finesse into our dishes but without ever forgetting the essence.

The Fillet

A simple dish, in which the tenderness of the meat is combined with the taste of porcini mushrooms or sauces. A sprinkle of pepper and a drizzle of extra-virgin olive oil complete the dish.

Stew

People employed in the brickyard of Impruneta, near Florence, had to work hard for or a few coins; for this reason they prefer cuts of meat considered “poor”, like the muscles that needs to be cooked really slowly to became soft and to absorb flavor of pepper, garlic and red wine. This is how one of the traditional Tuscan dishes, the Peposo, was born.
